You can strain the mixture through a fine-mesh sieve to remove the fiber — this gives a smoother juice texture. Left unstrained, all plant fiber is retained. Both approaches work, depending on your preferred consistency.
Raw beets, carrots, and celery stalks are hard ingredients that a slow juicer can only process with pomace loss — the Vitamix processes them whole-fruit, keeping the fiber in the drink or allowing it to be strained out afterward by choice.
