Instructions

  1. 1

Add all ingredients to the Vitamix container in the order listed and secure the lid.

  2. 2

Start the Smoothie program, or turn the blender on at the lowest speed and ramp quickly to the highest. Blend for 40–50 seconds, using the tamper to push ingredients toward the blades.

  3. 3

Enjoy within 24 hours to preserve flavor and nutrients. Optional: strain the mix through a fine sieve to separate the fibers. These can be used for cooking, baking, or composting.

Chef's Note

This recipe is a good starting point for your own experiments. Replace spinach with kale or romaine lettuce, swap apple for pear, or use mint instead of cilantro. Straining the juice through a sieve gives a smoother texture but removes most of the plant fiber. Leaving it unstrained keeps all the fiber intact. Drink the juice within 24 hours for the fullest flavor.

The Vitamix processes cucumber, apple, and baby spinach as whole-fruit without a juicer — fiber, cell juice, and aroma stay fully in the glass. A slow juicer would discard apple pulp and spinach fiber as pomace; here everything comes through, optionally strained at the end. The speed ramp (low→high) prevents splashing with the water-rich cucumber.

Frequently Asked Questions

Do I need a juicer for this green juice?
No. The Vitamix processes every ingredient as whole fruit – cucumber, apple, and baby spinach go into the container whole and are broken down completely. A slow juicer would discard the pulp and spinach fibers as waste; here nothing is lost.
Can I strain the juice, or is it better with the pulp?
Both work. With the pulp, you keep all the plant fibers in your glass; strained, you get a clearer, lighter texture. The strained fibers can be reused for cooking, baking, or in the compost.
How long does the green spring juice keep?
It is best to drink it within 24 hours so the color and flavor stay fresh. Well sealed in the fridge, it keeps for up to two days, but loses some of its vibrancy.
Can I vary the ingredients?
Yes. Spinach can be swapped for kale or romaine, apple for pear, cilantro for mint or parsley. The juice works well as a base for your own experiments – the basic ratio of liquid, greens, and fruit is best kept the same.
Which Vitamix is suited for green juices?
Every Vitamix breaks down cucumber, apple, and baby spinach completely. For 2 servings (1.4 L container), the Explorian E310 or E510 works well, for example. For larger batches (5 servings), use the 2.0 L container with the E320 or an Ascent model.
