Instructions

  1. 1

Add all ingredients to the Vitamix container in the order listed and secure the lid.

  2. 2

Start the Smoothie program, or start the blender at the lowest speed and ramp quickly to the highest. Blend for 40–50 seconds, using the tamper to push ingredients toward the blades.

  3. 3

Enjoy within 24 hours for maximum flavor and nutrients.

  4. 4

Optional: strain the mixture through a fine-mesh sieve to separate fibers from the juice. You can use these fibers for cooking, baking, or composting.

Chef's Note

If you are not using organic produce, peel the fruit and vegetables before processing. For a chilled juice straight from the blender, refrigerate all ingredients for a few hours and use ice water. You can strain the mixture through a fine-mesh sieve to remove the fiber — this gives a smoother juice texture. Left unstrained, all plant fiber is retained. Both approaches work, depending on your preferred consistency.

Raw beets, carrots, and celery stalks are hard ingredients that a slow juicer can only process with pomace loss — the Vitamix processes them whole-fruit, keeping the fiber in the drink or allowing it to be strained out afterward by choice. The high speed makes pre-cooking or soaking unnecessary and keeps the juice cold.

Frequently Asked Questions

Do I need a juicer for the Ruby Renewal?
No. The Vitamix processes whole beets, carrot, and celery as whole produce – no juicer needed. A slow juicer would discard the fiber and pulp as waste; here everything goes into the glass, optionally strained at the end.
Do I need to cook or peel the beets?
No, raw beets go straight into the blender. With organic produce, a thorough scrub is enough; with conventional produce, peeling is advisable. The Vitamix breaks them down completely – no pre-cooking needed.
Can I strain the juice?
Yes. Strained, the juice turns out clearer and lighter; with the pulp left in, you get all the plant fiber. The strained fiber can be used in cooking or baking, or composted.
How long does the Ruby Renewal keep?
It is best to drink it within 24 hours to keep the color and flavor fresh. Well sealed in the refrigerator, it keeps for up to two days.
Which Vitamix is suited to this recipe?
Every Vitamix breaks down raw beets and carrot without trouble. The Explorian E310 is enough for 1.4 L servings; for the larger 2.0 L version (6 servings), the E320, E520, or an Ascent model is a good fit.
