5 minEasyCocktailVegetarian

This Strawberry Frosé combines rosé wine with frozen strawberries and ice into a refreshing frozen cocktail. Blended in less than a minute, the recipe can be varied with different fruits.

Instructions

  1. 1

Add all ingredients to the Vitamix container in the order listed and secure the lid.

  2. 2

Start the blender at the lowest speed and ramp quickly to the highest. Blend for 45 to 55 seconds, using the tamper to push ingredients toward the blades.

  3. 3

Pour into cocktail glasses and serve.

Chef's Note

You can substitute the strawberries with frozen watermelon, peach slices, raspberries, or a mix of different fruits. For a stronger cocktail, add 120 ml of vodka or tequila. Taste and adjust sweetness as well as lemon or lime juice as needed. Frozen fruit works just as well as fresh and is available almost year-round. If using fresh ripe strawberries, freeze them for about an hour before blending. Try it before sweetening — you may not need any added sweetener at all.

For a uniform slush without coarse ice chunks you need a blender that can process frozen strawberries and ice cubes into fine snow in seconds — a weaker countertop or bar blender will break the frozen mass unevenly, causing ice shards and liquid to separate quickly. The Vitamix cuts through the frozen mass evenly with high blade speed before frictional heat can re-liquefy it. Make sure to use the tamper: it pushes the dense mass continuously toward the blades — without it, an air pocket forms and the upper portion of the frosé remains unblended.

For a non-alcoholic version, use alcohol-free rosé or a mix of grape juice and sparkling water. Enjoy this cocktail in moderation — it is intended for adults.

Frequently Asked Questions

What does Frosé mean?
Frosé is a blend of the words Frozen and Rosé — in other words, a frozen rosé wine cocktail. The Frosé originated in the US as a summer cocktail and has been adapted around the world ever since.
Do I have to serve the Frosé right away?
Yes, ideally straight from the blender into the glass. The slush texture breaks down quickly because alcohol lowers the freezing point — so the drink turns liquid faster than alcohol-free frozen drinks. Pre-chilled glasses slow this process down a little.
Can I make the Frosé without alcohol?
Yes. Replace the rosé wine with alcohol-free rosé wine or with a mix of grape juice and sparkling mineral water. The amount stays the same, and the texture turns out a bit firmer because without alcohol there is no lowering of the freezing point.
Which rosé wine should I use?
A dry to off-dry rosé wine that you would happily drink on its own — the same principle that applies to cooking holds true here too. Very inexpensive, heavily sweet rosés can destabilize the texture because they carry more residual sugar.
Can I prepare the Frosé ahead and freeze it?
Partly. You can freeze the mixture (without blending) and blend it again in the Vitamix just before serving. Freezing a fully blended Frosé and thawing it again usually results in a texture that is too watery, because the alcohol prevents it from refreezing.
