Kale has a strong flavor — and that is exactly what makes it one of the most honest green smoothies you can make in the Vitamix. With ripe banana and mango, it gains a natural sweetness that balances the bitter character of the kale without hiding it. The result: a fresh, full-bodied smoothie with deep green color, creamy texture, and not a single piece of fiber.

The key is in the preparation: only the leaves go into the blender — the thick stems stay out. They are tough, fibrous, and bitter, and even the Vitamix high-performance blender would reach its limits breaking down the woody stems. The leaves, on the other hand, are fully broken down: cell walls opened, fibers released, creamy texture without straining or pressing.

Kale (Brassica oleracea var. sabellica) is a winter vegetable in season from October to March — after the first frost it is especially mild. In summer, kale from the supermarket can taste a bit more intense; in that case, simply increase the amount of mango slightly.

    Remove the thick leaf stems from the kale: hold the leaf and strip the stem downward, or cut along the stem with a knife. Use only the leaf surfaces — stems are fibrous and intensely bitter. Wash the leaves thoroughly under cold running water and let them drain. Cut the apple roughly into pieces (remove the core to taste, leave the skin on). Peel the banana. Peel the mango and separate the flesh from the pit.

    First pour the water into the Vitamix container. Then add the kale leaves, the banana pieces, the apple pieces, and the mango. Secure the lid. Keep the tamper ready if needed — kale leaves are voluminous and can pile up at first. Start on the lowest setting and quickly increase to the highest setting. Blend for 45 to 60 seconds, until the smoothie is fully smooth and creamy.

    Pour the smoothie directly into glasses. Optionally season with a splash of freshly squeezed lemon juice — it brightens the color and rounds off the bitterness. Drink right away; freshly blended, the flavor is at its most intense. If you prefer a slightly sweeter smoothie, add a teaspoon of maple syrup.

Remove the thick leaf stems from the kale: hold the leaf with one hand and strip the stem downward with the other — or cut along the stem with a knife. Only the leaf surfaces go into the blender. This is the most important step for a tender, non-bitter smoothie.

Control the bitterness: for a milder smoothie, use a very ripe, almost overripe banana — it is sweeter and dampens the kale bitterness especially well. Mango serves the same function; if you have no mango, you can replace it with pineapple (fresh or thawed). Do NOT peel the apple — the skin contains fiber and adds a slightly tart, fresh note that goes well with kale. You can blend in the core or remove it, to taste.

For large amounts of leaves, use the tamper: kale is voluminous and can pile up at the start of blending. Secure the lid, insert the tamper, and gently push the leaves down toward the blades — once the vortex forms, the blender works on its own.

Why do the kale stems need to be removed?
The thick central stems of kale are problematic for two reasons: first, they are noticeably more bitter than the leaf surfaces — the bitter compounds are more concentrated in the stem. Second, they are woody and fibrous; even high-performance blenders cannot fully break the tough stems down into a creamy texture. The solution is simple: strip the stem downward or cut it out with a knife — for 60 g of kale this takes less than two minutes and makes the difference between a fibrous and a fully creamy smoothie.
How can you control the bitterness of the kale smoothie?
The bitterness in the kale smoothie can be adjusted in three ways: first, through the amount of leaves — 60 g for 2 servings is a balanced starting point, and less gives a milder smoothie. Second, through sweetening: a very ripe, almost overripe banana is the most effective method, because its high natural sugar content neutralizes the bitterness. Ripe mango or pineapple also work very well. Third, through lemon juice: a splash brightens the flavor and pushes the bitterness into the background without masking it. If you appreciate the full kale character, leave out the lemon juice and increase the amount of leaves slightly.
Do I have to peel the apple?
No — the Vitamix blends the apple skin completely, with no piece left in the smoothie. The skin contains fiber and gives the smoothie a slightly tart, fresh note that goes well with kale. This is one of the central advantages of a high-performance blender over weaker machines: the whole fruit is fully used. The core is a matter of taste — the seeds are also fully broken down and leave a slightly bitter, almond-like note. If you want the smoothie milder, remove the core; if you want to use the whole fruit, leave it in.
What happens if I blend in apple seeds?
Apple seeds contain amygdalin, which can release traces of hydrogen cyanide when crushed. However, the amount from the core of a single apple is insignificant for health — you would have to consume a very large quantity of seeds (several hundred) at once. The Vitamix breaks the seeds down completely, leaving no hard pieces. In terms of flavor, the seeds bring a slightly bitter, almond-like note — this is more relevant for the kale smoothie than for sweet fruit smoothies, because the bitterness can add up. If you prefer it milder, remove the core before blending.
Can I freeze kale and then use it for smoothies?
Yes — frozen kale works well in the Vitamix and has two advantages: it is available all year and chills the smoothie without ice cubes. Freezing pre-breaks the cell walls of the kale, which makes it easier to break down in the blender. Add the frozen leaves directly from the freezer into the container — the amount can be reduced slightly, because frozen kale is often more compact than fresh leaves. Standard frozen kale is already available without stems and saves the preparation time.
When is kale in season — and does the flavor change?
Kale is in main season from October to March. After the first frost, the plant builds up natural frost-protection mechanisms — it converts starch into sugar, which makes the flavor noticeably milder and sweeter. Winter kale is therefore naturally less intensely bitter than summer or early-autumn kale. In summer, kale from the supermarket is often more intense in flavor — in that case a ripe mango or a bit more banana helps as a balance. Frozen kale from peak season is a good alternative for year-round use.

Before drinking, shake briefly or blend again for 10 seconds. For smoothie prep, you can freeze the prepared ingredients (kale, banana, apple, mango) in portions and add them directly from the freezer into the blender — this saves time in the morning.
