This green juice combines cucumber, baby spinach, green apple, and lime with fresh cilantro into a light, herbal flavor profile. It delivers natural freshness and works as a base for your own variations with favorite fruits or vegetables.

    Add all ingredients to the Vitamix container in the order listed and secure the lid.

    Start the Smoothie program, or turn the blender on at the lowest speed and ramp quickly to the highest. Blend for 40–50 seconds, using the tamper to push ingredients toward the blades.

    Enjoy within 24 hours to preserve flavor and nutrients. Optional: strain the mix through a fine sieve to separate the fibers. These can be used for cooking, baking, or composting.

Chef's Note

This recipe is a good starting point for experiments of your own. Replace spinach with kale or romaine, swap apple for pear, or use mint instead of cilantro. Straining the juice gives a smoother texture but removes most of the plant fiber. Unstrained, all the fibers stay in. Drink the juice within 24 hours for the full flavor.
